This herb has a similar flavor to fenugreek. It smells slightly of maple syrup and has a great mildly bitter flavor. It’s used as a component of khmeli suneli, a spice mix from Georgia and the Caucasus. It’s also used to flavor and color sapsago, which is a traditional green cheese from Switzerland.
Slightly scarify the seeds for a higher rate of germination. Over-seed as they have the tendency to germinate slightly erratically. In the future, we will plant ours in part sun because they didn’t thrive in full Utah sun.
